Learning from Chocolate Talent

Chocolate was the topic in both class and lab during Chocolate Bootcamp, a course offered by Retail Confectioners International in Baltimore this August.

Romolo Chocolates confectioner and chocolatier Roman Stefanelli was joined by operations manager Michael Rudolph and moulding specialist Scott Skrzypczak for the intensive session. All three brought back new knowledge of chocolate artistry, tempering, recipe formulation and more.
