Romolo Chocolates Master Confectioner Graduates Truffles Course
Tony Stefanelli, owner and certified master confectioner at Romolo Chocolates, graduated from Retail Confectioners International’s (RCI) Truffles + More course held Feb. 20-22, 2019, at Savage Bros. Co. in Elk Grove Village, IL.
The course combined lecture and lab during which students learned the science behind formulations and trouble-shooting techniques for truffles, meltaways and nut pastes. Participants gained hands-on experience making these confections using several different applications. “Cream ganache dessert truffles will soon be a part of Romolo Chocolates Cocoa Café menu,” says Stefanelli.
In addition to academics, students were able to build relationships and learn from each other. “I hope to see chocolatiers from other companies this summer,” Stefanelli explains, “who want to come to Romolo Chocolates and work with us on products they hope to start producing in their stores.”
